Founder of NewTritionInk, Owner of the Knottyfood Manufactory (Knöterich Manufaktur) and Director of the Wildfood Workshop (Wildkräuter Werkstatt) at Campus Klarenthal in Wiesbaden, Germany.

As a chef, cook trainer, nutritional counseler and foraging instructor, I`ve spend the past 28 years exploring new food plants and am presently redirecting by becoming a certified mushroom guide.

I`ve published nine books, have an assortment of wildfood products, do wildfood caterings, lectures and seminars about edible wild plants, invasive plant species, food waste, edible insects, underutilized food crops and mushrooms.

I also hold seminars in Germany, Austria and Switzerland.
