I am a Chef Forager for a certified organic restaurant - with a derogation for wild foods - in Co Wicklow. I pick wild vegetal food every day and while some is used fresh and I also preserve (wines, cordials, pickles, jams, chutneys, infusions, drying) that the chefs will use during the year. As part of my job I also give workshops within the restaurant's activities.
